If it is built on the Ducato x250 then the passenger airbag can be switched off in the menu using the MENU button to the right of the steering wheel. [ I believe the main driver airbag cannot be deactivated]. The linked video is for a different Fiat model but the process is the same.

As a matter of interest, should the passenger airbag be switched off when there's a FRONT-facing child seat on the passenger seat, or only with a REAR-FACING baby seat?

At what height/weight would the advice change? And where can I find official advice?

Yes thanks - "It’s OK to leave the airbag active for forward-facing-seats but you should move the car's seat back on its runners as far as it will go. Do check your car handbook for model specific advice though as airbag size and performance does vary."
